No-Bake Pumpkin Spice Energy Balls

Ingredients

1 1/2 c raw almonds
1/4 hemp seeds (we used chia seeds to up the fiber)
1/4 c unsweetened dried shredded coconut
1/2 tsp + 1/4 tsp pumpkin pie spice
1 tbsp coconut oil
1/4 c pumpkin puree
10 pitted Mejdool dates (about 1 c)
2 tbsp coconut sugar

Directions

  • Combine the almonds, hemp or chia seeds, coconut, 1/2 tsp pumpkin pie spice, coconut oil, pumpkin puree, and dates in the base of a food processor. Turn the processor on high for about two minutes or until the ingredients are well combined
  • Pour the mixture into a mixing bowl and use your hands to roll the dough into about 15 balls, each about 1 1/2 inches in diameter
  • Mix together 2 tbsp of coconut sugar and 1/4 tsp pumpkin pie spice and roll each ball in the mixture to coat
  • Chill for 2-3 hours in the refrigerator, and store in the freezer for up to two months
